Components
Ingredients (for 6 people)
1 package (500g) of ready-made cannelloni (which does not need to be boiled),
6 spoons of olive oil,
1 large onion chopped,
1 grated carrot,
2 fillets (600-700g) chicken breast cut into small pieces,
2 cans (2X400g) of tomatoes chopped,
1 teaspoon of sugar,
1 teaspoon of smoked paprika,
½ fl. parsley,
½ cup dry white wine,
2 spoons of self-raising flour,
1 fl. semi-skimmed milk,
2 fl. grated mozzarella or graviera or kefalotiri,
HOW I MAKE THIS:
First prepare the tomato sauce: Pour the 2 spoons of olive oil into a pan and saute half the onion. Then you add the carrot and continue sauteing. Next, add the tomatoes, sugar, paprika, parsley and salt and pepper. Boil on low heat for about 10 minutes and let it cool.
Put it in a glass bowl.
Clean the pan and add 2 spoons of olive oil. When it burns, saute the remaining onion and the chicken. Deglaze with the wine and when it evaporates, season with salt and pepper. Preheat the oven to 180°C.
Then make the béchamel: Put the rest of the olive oil with the flour in the saucepan, mix until they become a mixture and add the milk. Season with salt and pepper and stir constantly until it thickens. Put the béchamel, half the tomato sauce, the chicken and the cream cheese in a bowl and mix.
Cover the base of a 35X25 cm pan with a little tomato sauce, fill the cannelloni and place them evenly over the sauce. Cover them with the remaining sauce. Sprinkle with the cheese, cover the pan with aluminum foil and bake in the preheated oven for about 20 minutes.
Uncover the pan and continue baking for another 10-15 minutes or until the cheese melts and the food is golden brown.
TIPS
If you can find juicy red tomatoes in the market, then you can replace the 2 cans with 1 kg of fresh chopped tomatoes.
