INGREDIENTS:
4 Mackerel fillets with skin left on from Walter Purkis & Sons We can fillet for you in the shop.
For the Piri Piri marinade
1 teaspoon smoked paprika
1 red chilli chopped (use more if you like it hotter)
1 small red pepper chopped
3 cloves garlic, chopped
2 tablespoon extra virgin olive oil
Salt and freshly ground black pepper
To serve
2 tbsp chopped parsley
A squeeze of lemon juice and wedges
HOW I MAKE THIS:
Lay the mackerel fillets on a plate. Mix the piri piri marinade ingredients together in a bowl (or in your liquidiser) and blend the chillies, red pepper, olive oil and salt until smooth.
Lightly score the mackerel about five times on the skin side. This will allow the flovours to stick to the greater surface area. Then brush on plenty of the mixture over both sides of the fish.
Transfer to a tray and refrigerate until required. You should allow them to marinade for at least 30 minutes.
Preheat the grill until it is glowing red. Arrange the mackerel fillets, skin side uppermost on a baking sheet and spoon over any remaining marinade.
Grill the fillets for 4 – 5 minutes on the skin side only until the flesh has lost its translucency and the skin has blistered and peels away easily.
Arrange the Piri Piri mackerel fillets on a large serving dish and sprinkle with chopped parsley and lemon juice. Arrange the lemon wedges around the edge. Serve right away with bread or potatoes.
