Wonderful Ravani with coconut. An easy, fluffy and aromatic semolina dessert, simply irresistible!
PREP TIME: 15 minutes
COOKING: 45 minutes
WAITING: 30 minutes
INGREDIENTS:
(for a pan with a diameter of 20-22 cm.)
6 eggs
150 g. coarse semolina
80 g. soft flour
140 gr. sugar
50 g coconut + 100 gr. extra for sprinkling
zest of 1 lemon
a little butter for greasing the dish
For the syrup
300 gr. sugar
300 g water
200 ml almond liqueur (or other of your choice)
HOW I MAKE THIS:
For the cashew ravani, preheat the oven to 170°C.
Beat the eggs with the sugar in the mixer until they are fluffy and white.
Add the semolina, the flour, the 50 g. coconut and lemon zest and mix until combined.
Butter the pan, pour the dough and spread it evenly.
Bake for about 30-40 minutes, until the ravani puffs up and turns golden on the surface.
